Additional Information: | COMBINED GAMBREL ROOF HOUSE AND ATTACHED CHEESE FACTORY MAKER OF EDAM ("HOLLAND CHEESE") SOLD IN NY AND LA. Fox River Valley Survey. F roll negatives filed with Fox River Valley Survey project. HAER INVENTORY (08/1979): The structure was raised in 1924 on the site of two earlier wood frame plants which had burned. It measures 57' x 66' including living quarters at the back, a traditional arrangement from Holland, the ancestral home of the Scray's. A 33' x 72' addition has recently been made to accomodate later selling area. Edward Scray, the builder, learned the trade from his uncle who had migrated from Holland to settle in Little Chute, Wisconsin. There he made Edam cheese, locally known as Holland-type. Scray started in De Pere in 1924, with about 35 patrons from the surrounding area (4 sq. mi.). He continued to make Edam and sold it in Los Angeles and New York. the number of patrons has declined to 12 but the volume of cheese produced has increased because of the larger volume of milk produced per farmer. |
