Additional Information: | The original main block of the factory was constructed in 1947 for the Chalet Cheese Cooperative cheese factory that was located about half a mile south of the building. The cooperative had been established in 1885 and remained a cooperative of farmers today at least to 2003. In 2003, the plant was producing brick and baby Swiss cheese, but it is most famous for its limburger cheese. Before the late twentieth century, many plants in Green County made limberger cheese, but that number dwindled as the product fell out of favor gradually. As of 2003, the Chalet Cheese Cooperative is the only factory in the United States that still makes limburger cheese. The original section of this cheese factory was designed to reflect the Swiss heritage of the area. |
