Old Cheese Factory Records Interesting
Farmer Nick Freitag opened his cheese factory near Monticello in 1868, just as the transition from wheat to dairy farming was getting under way. This article briefly describes the state of dairying at the time, and includes a picture of his operation's humble beginnings.
