A 1944 cookbook featuring dairy products
Favorite Recipes from America's Dairyland
Answering an apparent need for a dairy cookbook, the Wisconsin Department of Agriculture produced this cookbook in 1944 featuring "nutritious and zestful" meals. Recipes were selected from over 17,000 entries submitted by women from around Wisconsin, which were then tested by women in various home economics departments. Recipes include such winners as potato pancakes, egg nog, kolachy, and buttermilk ham souffle, in addition to some unique treats like "nippy cheese" sandwich filling and jellied cheese salad.
